Its Double Delight treat day you all, I get to share two recipes with you today to brighten your weekend and cool off from the long hectic week.

Topping our Double Delight treat chart today, I present to you a lovely cocktail – known as Rosemary Citrus Spritzer and a nice snack – Coconut Rocket Cake

I don’t have a sweet tooth but I love to drink a lot of soda which isn’t quite healthy moreover I really need to burn the fat away from Chubbyrefo to Slimmyrefo….Yay yay Rosemary Citrus Spritzer to my rescue…finally it’s about to go down.

Rosemary Citrus Spritzer is an incredibly refreshing drink infused with lemon, orange and wonderfully subtle, yet fragrant rosemary leaves.

Rosemary is a fragrant evergreen herb native to the Mediterranean. It is used as a culinary condiment, to make bodily perfumes, and for its potential health benefits.It is also a good source of iron, calcium and Vitamin B6

It is a rich source of antioxidant; it helps in improving digestion, enhances memory, prevents infection, aids in hair growth and improves skin….now you know why I shine bright like a Diamond. Rosemary leaves can be found in our major groceries stores and malls.

Least I forget Rosemary is a wonderful herb for seasoning chicken, lamb dishes and Omelets, Frittatas and Baked Potatoes.

A bit of Honey in our Rosemary Citrus Spritzer tops off this out- of -the world Spritzer and I couldn’t be happier with the result.

Our Coconut rocket cakes can be enjoyed by everyone most especially kids and can be served at parties and other occasions.

Rosemary Citrus Spritzer

This recipe makes 10 to 12 drinks


  • 2 lemons
  • 2 oranges
  • 4 (4-inch) Fresh rosemary leaves
  • 3/4 cups sugar
  • 1/4 cup honey
  • Ice cubes
  • Soda water, 7up or Sprite
  • Rosemary and lemon for garnish (optional)


  • Peel off thick strips of zest from 1 lemon.
  • Juice the lemons and oranges into a liquid measuring cup – you should have about 1 cup of juice. Top off with water if necessary to make 1 cup.
  • Combine zest, juice, rosemary, sugar, and honey in a saucepan over medium heat. Boil for 1 minute, stirring constantly to dissolve the sugars.
  • Remove from heat and let sit 10 minutes. Strain, discard solids, and let syrup cool completely.
  • To serve, fill an 8-ounce glass halfway with ice cubes, add 2-3 tablespoons syrup, fill with soda water 7up or Sprite, and stir.
  • Garnish with rosemary sprigs and/or lemon slices, if desired.

  • 250 grams of Flour ( The flour must be sieved)
  • 15 grams of Baking powder
  • 1 teaspoon of salt
  • 63 grams of Castor Sugar or Icing sugar
  • 60 grams of Eggs
  • 60 grams of Butter
  • 25 grams of Coconut flakes
  • 90 grams of Coconut Milk
  • Egg wash ( Whisk egg and use to base or coast the pastry)


  • Pre heat Oven to 210 degrees
  • Sieve all dry ingredients (i.e. Flour, Baking Powder etc)
  • Dissolve Sugar in egg
  • Rub butter into flour to form a crumb mix
  • Add coconut flakes
  • Blend in milk to sugar and pour into crumb to achieve a smooth mix
  • Form into coarse balls and apply Egg wash and Castor Sugar
  • Lay the Balls on the Baking paper on the Baking Pan and space them evenly
  • Bake for 15mins until Golden brown
  • Voila
