Thank God it’s Friday!!! Another weekend is here, what are we cooking???

So I’ve been trying forever to get Fochic’s Cuisine to give us some of her awesome continental recipes on the blog. Fochic’s cuisine is run by my bosom friend Arefo Isabu. They are based in Lagos and render catering services for events with African, National and Continental dishes.

Guess what? We finally have her and she’ll be giving us continental recipes that we can actually prepare at home. Have fun!




Yippee it’s my first featured dish on winningmomsdiary

Italian dishes are my absolute favorite. I have never been to Italy but it’s certainly on my to-do list. I look forward to all kinds of Italian food ranging from Pasta to Pizza to Antipasti etc. and being spoilt for choice with authentic Italian cuisine.

Traditional Central Italian cuisine use ingredients such as Tomatoes, all kinds of meat, fish and pecorino cheese.

We can also embark on a Pasta discovery journey on different types of Pasta ranging from the very popular ones known i.e. Spaghetti, Macaroni to Farfalle, Gnocchi, Lasagne sheets, Papardelle, Penne, Ravioli, Rigatoni , Linguine Fusilli and the list goes on and on.

However, for today’s recipe we would be using the type of pasta called “Tagliatelle”.

They are long and flat ribbons pasta which can be easily purchased in big malls. It can be served with a variety of sauces, though the classic is a meat sauce or Bolognese sauce.

While i continue day dreaming about my trip to Italy, here is my recipe for this super tasty Italian dish called Pasta Bolognese…Enjoy and don’t forget to try this recipe at home….trust me its BAE anytime and a Hitz back to back….lol

  • Tomatoes (Fresh Tomatoes or Plum Tomatoes)
  • Olive oil
  • Onions
  • Garlic
  • Pasta – Tagliatelle
  • Bell peppers (Different colours)
  • Minced meat
  • Carrots
  • Cucumber and Fresh chopped Parsley leaves for Garnishing
  • Fresh
  • Spices- Sage, thyme, oregano, spice for mince, rosemary leaves, zeal, white pepper, Italian seasoning, basil leaves ( Robertsons, Supreme or any brand of spice is applicable)



For the Bolognese sauce

  • Marinate the Mincemeat by adding some chopped onion, garlic and all spices as stated above.
  • Then mold the mincemeat into small balls and set aside on a flat plate or tray.
  • Heat up olive oil in a wok or a frying pan
  • Add Fresh chopped Onions and Garlic until fragrant
  • Add the Mincemeat which have been rolled in balls and fry until well cooked for about 5-7 minutes
  • Break open to check the meat is properly cooked
  • Add Plum tomatoes or Fresh tomatoes- ( For Fresh tomatoes cut out the seed from the tomatoes to reduce the water content in the tomatoes and cook for additional 2 – 5minutes
  • Add herbs and spices- mint leaf, thyme, oregano, basil leaves, zeal etc
  • Add carrot and bell peppers
  • In a large pot of boiling salted water with Olive oil, cook Tagliatelle Pasta until tender but firm,about 10 minutes
  • Once cooked rinse with cold water and set aside.
  • In another Wok or Pan add some butter ,allow to melt and then toss in the Tagliatelle to give it a glossy look
  • Add some salt and Black pepper and allow to seamer for 1-2 minutes
  • To serve sprinkle with freshly chopped parsley leaves and garnish with Cucumber.

    If you are based in Lagos, you can find Tagliatelle Pasta in any major Shopping mall in Lagos like Shoprite, Prince Ebeano, Mega Plaza etc.
